2 Easy Meals For Families On The Go

When the weather warms up, the schedules get busier…especially if your kids enjoy sports.  It is definitely a challenge to get dinner on the table with one child practicing at 5 and the other one not until 6 or 6:30.  Hitting the drive thru constantly, or even a healthier option like Subway, is not easy on the budget.  Particularly, if done multiple times per week.    So in an attempt to keep our eating out to a minimum and provide a little variety, I want to share a few meals that I commonly make for our family.  These are easy meals we can heat up and take with us to the ball fields or pack in a cooler.  

 

 

Meal 1: Grilled Chicken Skewers

Our family loves these chicken skewers!  The ones I purchase are from Costco, but you could easily cook your own and have them ready to grab on a busy night.  I love that they only take 4 minutes to heat up in the microwave.  I love how easy these chicken skewers are on the go, because the sticks make them easy to eat and hang on to.  They are also delicious and filling, which is important for my youngest, since she is a bottomless pit.  

 

 

I typically heat them up and throw them all into a gallon size Ziploc or I will put a couple skewers in smaller sandwich bags for each kid.  For my family of 5, I make up the entire package (about 3-4 skewers each).  Just add a few bags of fruit and veggies, and some crackers and you have yourself a budget friendly meal on the go!  

 

 

 

Meal 2: Italian Subs

Instead of just throwing in cold sandwiches, mix everything up and make Italian subs.  Add salami and large pepperoni to a ham and cheese sandwich.  Or swap cheddar cheese for provolone cheese.  Your cold sandwiches don’t have to be boring….add a little extra to take it on the road.  

 

 

You can also grab bread from Jimmy John’s and then add your own meat for a cheaper sandwich option!  Just keep in mind, the day old bread works better for garlic bread…but if you do end up using day old bread for sandwiches (which I have), just cut the ends off because those tend to get hard.  Day old bread is normally $.50 and same day bread is around $2.00, just as a heads up.

 

 

These 2 quick and easy meals are perfect for on the go!  So don’t let a busy schedule run you ragged, enjoy your family dinners at the ball park or on the soccer field. 

 

 

 If your practices or games end earlier enough, another easy idea is to have meals ready to go in the crock pot.  It is the perfect ending to a night out if you walk in and have dinner hot and ready to go!

Get a little creative and embrace the challenge of a busy spring schedule.
